This low carb chicken salad recipe is our favorite way to eat lunch and fill up on fat. You can make it in bulk and eat on it all week long.

This recipe can be tailored to your own tastes. It can be made with leftovers or fresh fish, and takes very little time to pull together. It's definitely a keeper and is safe for gluten free diets.

I’ll be honest, these are much better with some sort of artificial sweetener in them. I’m not a fan of the way Stevia tastes, so if you are using another artificial sweetener in your Keto or Low Carb lifestyle, then use a bit in these fat bombs. Otherwise, they’re really delicious. Let them thaw a little bit before attempting to eat them. I don’t want you to break a tooth.
