Being a mom in the fall is no freaking joke. I’ve got gymnastics, ninja warrior, voice lessons, and soccer plus school and volunteer opportunities. It’s super easy to prep this chicken protein bowl ahead of time and then bake when you need to, but it also comes together pretty quickly from start to finish, plus it has bacon in it, so it’s a crowd pleaser.
You can eat it as-is or serve it over riced cauliflower or roasted spaghetti squash. Just don’t forget to get your veggies in somehow!
