Ohmygosh you guys, my favorite Disney movie, The Jungle Book is being released from the Vault on February 11, so as a result of my excitement, and as part of a sponsored post for #CollectiveBias and their client, I came up with a couple recipes for y’all to enjoy while watching your brand new Diamond Edition copy of the movie.
When I was in 5th grade, we lived in a little village 40 miles south of Juneau called Snettisham. There were two other families out there, 5 kids in total, 17 people total. Needless to say, we had no cable and it had to be a clear and sun-shiny day to get satellite. If you’ve ever been to Southeast Alaska, you’re laughing right now as you try to figure out that we probably had 20 satellite TV days a year. We relied heavily on our VCR and the small supply of movies that we had on hand. Those movies were: Anne of Green Gables, Anne of Avonlea, The Jungle Book, The Sound of Music, and the first two Indiana Jones movies. I’m relatively certain we had more movies than that hidden in a box somewhere, but that was our usual rotation.
The Jungle Book is, by far, my favorite Disney movie. I’m 32 years old and I still have the entire thing memorized. I’ve looked for it high and low for the past few years, hoping beyond hope that someone would sell a copy on Craigslist or something. To my disdain, nothing sprang up so I was literally jumping up and down when I found out that Disney would be releasing it from the Vault on Tuesday, February 11. I will be running to Walmart to pick up my Blu-Ray/Combo Pack Diamond Edition copy because The Muffin needs a new lunchbox, and Walmart is giving away Jungle Book lunchboxes with the Diamond Edition purchase.
Anyways, I really love Indian food, and because The Jungle Book is set in India, I decided to treat my taste buds to something new and different. I came up with a Kebab that represents all of the villains in the movie. There is a spicy sauce that you can drizzle on top of the kebabs once they are cooked, or leave off for the mancubs who can’t handle the heat.
The recipe is super simple and shouldn’t leave you with a ton of dirty dishes, which is a major plus in my book. My Walmart has a redesigned produce section. Everything is fully stocked and the produce was looking mighty fresh, so I grabbed some tropical fruit that I thought would do really well on the grill like pineapple, papaya, and mango.
I had The Workaholic slice our chicken breasts into strips that were about 1″ wide, and as long as the chicken breast.
We tossed the chicken strips with olive oil, lime juice, and dried, unsweetened coconut.
While the chicken was sort of marinating in the lime and coconut concoction, I chopped up all of the fresh fruit. I wanted pretty big slices of fruit so that it wouldn’t fall off of the skewer while it was being cooked.
I then threaded the chicken onto the skewer and alternated fruit. So it was something like chicken, pineapple, chicken, papaya, chicken, mango, chicken, pineapple. I ended up needing two strips of chicken for each skewer but the result is that it looks like Kaa slithering up the skewer between the deliciously sweet medley of fruit.
The papaya on the skewer is orange like Shere Khan, and the fire sauce represents both Shere Khan’s fear of fire and King Louie’s desire to learn to make fire. I had every good intention of grilling these skewers, but it has been cold and rainy in our part of the country, plus? You guys. The Workaholic’s grill fell over and the legs broke. off. This is a totally true story. We ended up having to bake them for 35 minutes, but they were still delicious, they just lacked that charcoal-grilled taste.
I made a couple skewers without the fruit because I wasn’t sure how the kids would end up liking them. Turns out, they thought they were AMAZING and The Workaholic ended up eating the chicken-only kebabs, after he devoured two fruit & chicken kebabs.
And because I just can’t leave well enough alone, I also concocted a #JungleFresh smoothie, using only fresh fruit as the sweetener. This smoothie isn’t overly sweet at all, but it is incredibly refreshing. It’s probably the perfect summer-time smoothie, and fantastical if you’re trying to lay off the refined sugars.

Ingredients
Kebabs
- 1.5lb Chicken Breast (Sliced into 1)
- 1/4 cup Olive Oil
- 1.5 Limes (The juice from 1.5 limes)
- 1/2 cup Dried Coconut (Unsweetened)
- 1 Pineapple (Cut into 1.5)
- 2 Mangoes (Cut into 1.5)
- 1 Papaya (Cut into 1.5)
Fire Sauce
- 1/2 cup Tobasco Pepper Jelly
- 1/2 cup Apple Cider Vinegar
- 1 tablespoon Water
- 2 tablespoons Fresh Cilantro
Note
These Kebabs can be grilled or baked. If you grill them, make sure you make the Fire Sauce ahead of time. If you bake them, you can make the fire sauce as they are baking.

- 1 handful Frozen Strawberries
- 1 handful Blackberries
- 2 tablespoons Fresh Basil
- 1 Lime (Juice from 1 lime)
- 1 cup Light Coconut Milk (And more if needed)
Optional
- 1/2 Banana (*only if you want a sweeter smoothie, I leave it out of mine*)
Directions
Step 1 | |
Place all ingredients into blender and blend until smooth. Add more coconut milk as necessary. Pour & enjoy! |
