When I was a single, struggling mom, I used to make Pigs in a Blanket for Styles at least once a week. It was his favorite meal of the week. Pair it with some broccoli and it’s a meal, right? Funny.
I quit making them when my reproductive endocrinologist put me on a very low-carbohydrate diet devoid of “white”. That was about 6 years ago and I haven’t made them since.
The Muffin and The Stinky love hot dogs and I’ve been having a craving for Pigs in a Blanket for a while now, so I set out to find the perfect biscuit recipe to wrap around some little wieners *cough* You know what I mean – get your head out of the gutter! I haven’t found one that I’m desperately in love with, but Perfect Paleo Biscuit recipe from Simply Living Healthy is as close as I could get. I added a couple of ingredients and I’m going to teach you how to make these biscuits into delicious Pigs in a Blanket that even your kids will eat.
This recipe is perfect for a healthy Superbowl snack, a delicious Paleo gathering of friends, or to take to your non-Paleo friends homes to show them just how delicious Paleo living can be.

Ingredients:
*For the BISCUITS:
- 6 egg whites
- 3/4 C almond flour
- 1/4 C coconut flour
- 1 t baking powder
- 1/4 t salt
- 1 1/2 T butter or coconut oil, chilled
- 1/4 t Garlic Powder
- 1/2 t Kosher salt
How to do it:
- Whisk egg whites until they are extremely frothy.
- In a separate bowl, mix the flours and baking powder then cut-in the cold butter or coconut oil. Add garlic powder and salt. You want the mixture to be quite crumbly, like moist sand. Place in the refrigerator for 15-20 minutes.
- Gently fold egg whites into the flour mixture, stirring until just combined.
- Preheat your oven to 400*
- Take 1 level teaspoon of batter and flatten into a rectangle in your fingers. 1 teaspoon is the perfect amount. If you use more than that, the biscuit will overpower the wiener.
- Place one wiener in the middle of the rectangle then wrap your fingers around it, smoothing batter all around the wiener.
- Place Pig in a Blanket on a parchment covered baking sheet.
- Repeat 51 times.
- Bake for 13-16 minutes, until golden. My oven sucks big Rocky Mountain Oysters so I sometimes have to cook mine for 20 minutes. I hope your oven is better than mine. Piece of junk.
These are delicious served with some Paleo Ketchup , or Dijon mustard. They are divine when served warm with a smattering of Chevre.
They are also great as a fun lunch or dinner for your kiddos. Just don’t forget to roast some broccoli or saute some Brussels Sprouts as a side!

I can’t wait to try these…it’s been a while since I’ve made a batch but I remember my “dough” being more batter-like so I’m wondering if I may need to add a bit more of the coconut flour to get it more solid for wrapping??? I’ll let you know how they turn out!

You know, pigs in a blanket is a very traditional Christmas appetizer in our family… which has gone mostly primal and that was the one main thing we weren’t able to “primalize” this last year. So – I am pinning this so we can do them RIGHT next year!

I made these for our Superbowl party last night, and they were a big hit! Some relatives won’t try the food we make, since they are most definitely not paleo, but most of them tried these and liked them!
I had to add some more coconut flour to make the dough more manageable. Time consuming, but worth it!

Hi! Curious if you might have thoughts to where I went wrong when making these. I planned on making them for my son’s birthday party yesterday, but the biscuit dough ended up being too wet and I couldn’t get it to get off my fingers to wrap around the little smokey. I tracked back and had all the right ingredients and amounts, Obviously you wouldn’t be able to tell me what I did wrong… But maybe if you have any tips on what to do next time if it happens again?? I tried adding more coconut and almond flowers and it wasn’t soaking it up. I definitely want to try making these again as I know my kiddos will love them. Thanks in advance!

Oh Cara, I’m SO sorry!!! I find that if I put the dough in the refrigerator for a while, it gets cool enough to mold a little more. It is a pretty wet dough but I had the same issue once and have NO idea where I went wrong. Try refrigerating it a little bit more if you can next time and let me know how it goes!

I’ll definitely try leaving them in the refrigerator longer. I love pigs in a blanket, so I’m not horribly discouraged!

I could not get these to work AT ALL! Do you think you could post step-by-step photos? My dry ingredients with my butter were fine, I refrigerated and then I tried to add my whipped 6 eggs and it just turned into soup! I have no idea how that was supposed to form a dough 🙁 I’m sure this recipe is fabulous because it worked for everyone else, but it just seemed like entirely too much liquid for such little dry ingredients! What could have gone wrong?
