Hey, all! I feel SO blessed to have Jackie from The Paleo Mama guest posting today. Jackie and I met personally when we both lived in Savannah, GA and started our Paleo journeys pretty much the exact same day (without yet knowing one another). Jackie is a mastermind in the kitchen, and comes up with some stunning, delicious recipes that wow me each and every time. I feel truly honored that she’s sharing this recipe here rather than on her very own blog, so I hope you’ll give her some love when you’re done here.

Fruity Kombucha Jello Bites
It’s no joke when I say that I am in love with Kombucha. I could drink it almost every, single hour. However, I limit myself to just 16-32oz a day. Unfortunately, but understandably, you can only have 8oz a day when you are on The 21 Day Sugar Detox , which I have been on for 2 weeks. So, I have a surplus of Kombucha right now and I have been making all kinds of fun jello-y things for my kids.
If you don’t know what Kombucha is, go over here and read some more about it. In short, it’s a fermented tea that is loaded with probiotics, enzymes and beneficial acids that are AMAZING for your gut and overall health.
I combined this amazing tea with some Great Lakes gelatin , another powerhouse supplement loaded with protein, vitamins, and amino acids. Add in some fruit juice, and some berries you have a delicious, healthy, fun, and simple treat for your family.
Fruity Kombucha Jell-O Bites
Ingredients:
1/2 cup of Pom fruit juice (or some other 100% juice)
2 cups of ROOM TEMPERATURE Kombucha
2 TB gelatin
Couple handfuls of fresh berries
Directions:
1. Simmer the Pom juice or other fruit juice on the stove until warm (not hot).
2. Add the gelatin and stir until dissolved. Remove from heat. You do not want the mixture to get too hot. Just heat it enough till the gelatin dissolves. If too hot it will kill all the beneficial bacteria and yeast that is in the Kombucha.
3. Pour the room temperature Kombucha into a larger bowl. A Pyrex or other glass pitcher is perfect for this because you will be pouring the mixture from it. Please make sure the Kombucha is room temperature. If it is cold, then the gelatin will clump up. Then stir your Kombucha/gelatin mixture.
4. Prepare your molds. You can also use a glass 9×11 dish if you don’t have any silicone molds. I used my silicone muffin molds. I put a few raspberries and blueberries to each muffin mold.
5. Pour your mixture into your molds.
6. Place in fridge for about an hour…you’re done! If you used a 9×11 dish, then just slice into bite-sized bites.
**To remove your Kombucha Jell-O from the molds or dish, place the bottom of the dish in a sink of hot water for ONE minute. Use a butter knife to loosen the sides of the molds, and then after a minute in the hot water, flip the molds upside down and the Jell-O should plop out. Don’t leave for over a minute or they will start melting**
***You can leave out the fresh fruit if you want to. I recommend using 3/4 cup of fruit juice and 1.5 cups of Kombucha if you do this. The berries add sweetness to the Jell-O.***
