Being a low carb/high fat eater is really awesome, except during the holidays. I’ve had to replace my annual cookie exchange with loneliness, my Christmas Eve cookie baking tradition with sorrow, and my Christmas Day face-down-in-a-pumpkin-pie tradition with a wanton longing for all things sugar. Don’t get me wrong, nothing tastes as good as being healthy feels, and I can’t stress enough how awesome it is to NATURALLY have my hormones regulated, my blood pressure down 30 points, and my cholesterol down to normal levels, but still – sugar. And eggnog. And figgy pudding. And Santa cookies. And, and, and. . .
Sigh.
I’m trying so hard to change my entire mindset, especially around the holidays. Food isn’t the end-all-be-all of fun, and I can make some really delicious, good-for-me choices. This isn’t just a weight loss ploy for me, it’s for my health, and it’s necessary. There are no other options, there just aren’t.
And I’m OK, really. I’m OK. I don’t even miss food most of the time, it’s just that… holidays.
I DO wish I could have some eggnog, some sweet, creamy, delicious eggnog. My favorite Christmas treat at Starbucks has always been the eggnog latte, but I can’t make that part of my daily diet anymore, so I set out into the kitchen to make something I could drink that would satisfy my longing for a steaming red cup of eggnog and coffee.
Luckily for me, fat isn’t a problem, except for the stuff on my thighs, so creating a bulletproof coffee with a hint of eggnog wasn’t as difficult as one might think. Luckily for me, and you for that matter, Starbucks Holiday Blend is available all over the place, not just in Starbucks stores, and I nearly always have a bag of Starbucks somethingorother in my pantry just waiting to reside in my burr mill grinder, then to be pressed into my french press before becoming a steaming hot cup of love in my coffee mug first thing in the morning.
I got my Starbucks Holiday blend at Publix, along with the rest of the ingredients for this recipe. Publix, where shopping really IS a pleasure. Since this is a morning drink, I left the brandy out. I really don’t want to be responsible for any Grandma got run over by a minivan situations. As an added bonus, you can get a $5 Starbucks Card e-gift when you purchase 3 or more qualifying Starbucks products. Merry Christmas to YOU, right? I could do some damage with a free Venti iced coffee with heavy whipping cream, no classic. I could also do some serious damage with a giant Eggnog Bulletproof Coffee, which I’ll share with you now.
This recipe makes enough for you to store and use for a few days. Whether or not you share with your significant other is entirely up to you. I would err on the side of not sharing, but I’m a greedy little coffee snob, so there’s that.
I altered a family recipe to make this super fatty and mostly-bourbon-free for anyone living a keto or low carb lifestyle. You could always add sugar free sweetener, but that is entirely up to you, I drink mine without it. The eggnog is SUUUUPER thick but melts nicely in a steaming cuppa joe. You wouldn’t want to drink it alone anyway.
PLEASE NOTE: This recipe DOES contain slightly cooked eggs, so I have to give you the standard cautionary be careful when you consume raw or slightly cooked eggs due to the slight risk of salmonella or other food-borne illness. I recommend you use only the very freshest, properly refrigerated, clean eggs with shells that have no cracks. Wash your eggs before you crack them, and seriously consider buying safe eggs from a local organic farmer, or the eggs pictured here which I purchased from Publix.

I am so impressed how well you’re doing sticking to that low carb/high fat diet! My husband is doing a similar diet and has lost 25 lbs and I *try* to be low carb but have been a slacker lately. I”m doing to have to try making this for us. It sounds so good, and I love that it can substitute a meal because I am terrible at eating well during the day when I’m busy working, and of course also need a coffee boost too. #client

Thank you for this recipe and your honesty about the holidays! I am diabetic and healing/treating with a no sugar, low carb diet. I have found it impossible to look to traditional diabetic recipes…they don’t seem to be made for people choosing to forgo meds. So keto is my new search term, as I am trying to maintain without going crazy as I cook “normal” for my kids/husband. I love the fall weather, but as my first fall/holiday season comes up…I’m kinda freaking out! Encouragement to you for all your holiday challenges…nice to know I won’t be alone when it just comes down to crying then picking up and moving on 🙂 Happy Fall!

You’ve got this! A lot of my recipes are labeled “Low Carb” instead of Keto because true keto requires macros and I just can’t do it I prefer to keep my diet under 60g carbs a day and low carb has just made my body super happy. I hope to come up with more recipes for you to stay strong this holiday season! Be sure to check out my butterscotch pumpkin cheesecake bites. I think you’ll go gaga for them if you like pumpkin! /butterscotch-pumpkin-cheesecake-bites/
