I love ice cream. I pretty much think that if you don’t love ice cream, you might not have been loved enough as a child and you need a hug. Ice cream is where it’s at. It also just doesn’t line up with my nutrition and fitness goals, so I try to stay far, far away. It’s not easy when we live half mile away from a frozen custard store, where the custard is made with local, delicious ingredients on the hour.
This has forced me to come up with delicious recipes at home to keep my ice cream cravings at bay while maintaining my nutrition goals.
This recipe has easy substitutions. Don’t eat peanuts or peanut butter? Substitute almond butter, sun butter, or cashew butter! Don’t like strawberry fruit preserves? Use grape or boysenberry instead. Or whatever it is that floats your ice cream boat.
