Grady’s Celiac Disease makes it difficult for snacking. So many foods that you can just buy off of a store shelf are, by their very nature, gluten free. It’s the processing and packaging processes that make certain foods unsafe for him to eat. Things processed on shared equipment aren’t always safe, so we very often have to make our own versions of things for him to eat, which is how this special Chex Mix was born.
We used gluten free cereals, gluten free pretzels, powdered sugar, and some Nestle peanut butter and chocolate chips for this ridiculously addictive snack. It’s loaded with sugar so it’s an occasional treat, but perfect for those parties we attend where Grady won’t have much to eat.
Gluten Free Chocolate Peanut Butter Chex Mix
Ingredients
- 1 box Vanilla Chex Cereal (18 oz Box)
- 1 box Nature's Path EnviroKidz Peanut Butter Panda Puffs Cereal (10.6 oz Box)
- 1 bag Glutino Gluten Free Pretzels
- 2 cups Powdered Sugar
- 1 stick Kerrygold Butter (Melted)
- 1 bag Peanut Butter & Chocolate Chips (Melted)

This delicious gluten free Chex Mix is perfect for people who eat a gluten free diet and want something to munch on at the movie theater or party where unsafe food is being served. It makes a TON and stores well in plastic baggies for later consumption. Enjoy!
Directions
Step 1 | |
In an extra large bowl, mix together both cereals and the gluten free pretzels. | |
Step 2 | |
Melt butter and pour over mix, stirring gently until evenly distributed. Mix in one cup of powdered sugar and stir gently until well coated, add second cup of powdered sugar and stir to coat. | |
Step 3 | |
Spread mix onto a parchment-covered banking sheet (or two). Melt peanut butter and chocolate chips according to package instructions then pour into a plastic baggie. Snip a small corner off of the baggie and squeeze peanut butter chocolate mix all over your mix until gone. | |
Step 4 | |
Place in refrigerator until chocolate hardens then crumble mix up and store in gallon-sized zip top bags. |
