Happy Saturday, everyone! I’m typing this at a much earlier hour than I normally wake but I’m not tired. Thank God for small miracles! I’ve had my steaming cup of coffee and didn’t have to worry about spilling it on a little head, or worse, worry about little hands dumping my coffee all over the carpet and up the wall.
No, that didn’t happen yesterday, nope! Not at all.
So how was your recipe? What did you make? We did something SO totally easy that I’m embarrassed to say it.
We grilled steak. Kyle made up his own rub and slathered it all over those juicy, tender slabs of beef. MOO.
I made turnip and parsnip mash and the general consensus was that we didn’t like it. It tasted an awful lot like carrots to me and not a single person in my little nuclear family likes cooked carrots. So we ate meat. Lots of it.
Today, you have two diet related challenges. I LOVE LOVE LOVE the second one.
Diet: 1. Primal Recipe, part 2. If you need to perfect your recipe from yesterday, work on it today!
2. Go COCO-nuts. Purchase LOTS of coconut products today! Coconut oil, coconut milk, coconut flour, coconut cream, dried coconut! GO coo-coo for coconuts! Coconut oil replaces PUFA oils for cooking, coconut milk can replace any dairy milk products that you are used to. It’s also fantastic in your coffee or whipped up to dollop on top of some fresh berries. Coconut flour can be used to make pancakes, cakes, cookies, you NAME it! Dried coconut is a staple in our home. We go through at least 2 bags/month and sometimes more. We put it in grain-free granola bars and eat it with sliced almonds & raisins. You can get phenomenal prices on coconut products on Amazon, which I highly recommend. If you are serious about Paleo, put yourself on their “Subscribe & Save” option. You can always go back and adjust how often you need things if you find that you need them more or less often. Amazon is even so kind as to send reminder emails about a week before your subscription ships. I have coconut oil on a monthly shipment, dried coconut on a bi-monthly shipment, and coconut milk on a monthly shipment. It saves us LOTS of money.
Exercise: PEM workout: Do either an abbreviated (one set) session, or a whole (2 set) session depending on your mood, motivation, and energy levels today. GO until your muscles fail on EACH exercise, OK? Make sure you rest to normal breathing between exercises.
