Since our vacation and my back-to-back blog events, I have been a bad, bad housewife. I haven’t been on a real grocery shopping trip since I got back. That means that we’ve been scavengers or eating-outers for two weeks. No bueno.
We’re all sluggish and lethargic and cranky. So as of today, we’re back at it bringing you another inexpensive week of Paleo meals.
We’re visiting Mexico, Thailand, Germany, Greece, and Italy with our food this week. These are all inexpensive meals, and the red cabbage from the fish non tacos can be reused for a side item with your fish cakes. The other meals won’t need sides unless you want to add a salad.
Your shopping list is color coded this week. That way if you decide you don’t want to eat Fish Tacos, you know what to omit from your list. There is also plenty of room to add breakfast, snack, and lunch options to your list. I’ve included a list of the things we are having for snack this week at the bottom of this post, but none of the ingredients are on your shopping list. Be sure to add them if you want any of the treats.
OH! And I have a really exciting surprise planned for sometime in June. It will be great for anyone you know who isn’t sure about Paleo and needs someone to almost quite literally hold their hand. Keep your eyeballs peeled for that!
Cheesy Stuffed Italian Turkey Burgers
These are SO delicious. You can find the recipe in Kiwi’s
Allergy-Friendly Food for Families
cookbook. The cookbook isn’t full of Paleo recipes, but it IS full of allergy-free recipes for kids with food allergies of all kinds. If you don’t have it yet, I highly recommend getting it soon. Otherwise, simply mix all ingredients together (except for the cheese). Form small, flat patties then put a pinch of cheese between two patties and pinch to seal. Cook at 350* for 25 minutes.
Fish Tacos
Follow my recipe for Fish Non Tacos and serve wrapped in Boston Butter Lettuce. For something a little less messy, leave the Boston Butter out of it and just eat them Fish (non) Tacos style. Tilapia is sold in enormous bags at Walmart for less than $10. Those bags feed our family of 5 for 3-4 meals. Talk about Cheap Paleo!
Slow Cooker Chicken Pad Thai
Paleo Pot is one of my favorite go-to websites for quick and easy meals. If you work outside of the home and are trying to figure out how to work Paleo into your hectic work schedule, my Paleo meal planning can certainly alleviate some of the guess work, but Paleo Pot is another great resource.
This Slow Cooker Chicken Pad Thai recipe
is new for us and I can’t wait to give it a shot. Plus, Paleo Pot has me convinced that I need this sweet

I wonder what The Workaholic is going to say about a new kitchen accessory?

Breakfast for Dinner
The loves of my life are the Paleo Parents. They keep me focused on healthy Paleo living and remind me that we eat this way to be healthy, not necessarily to lose weight. A week doesn’t go by where we don’t make at least one recipe from their website. This week, I’m craving breakfast for dinner one night and their Easy Peasy Pancakes are my absolute favorite gluten-free pancakes. They are perfectly, deliciously fluffy and taste like the real deal. I’ve also included Italian Sausages for you to brown on the griddle (cut in half first), bacon, and eggs. Have a real breakfast for dinner feast this week!
Beer & Brats
This might be one of my easiest recipes yet and it technically only uses 5 ingredients. My kids were completely silent when I made this recipe, while they stuffed their faces. It made just enough for all 5 of us so there were no leftovers. If you have a larger family, or want leftovers, simply double the ingredients.

- 1/2 bottle Gluten-Free Sorghum Beer (Or whatever you have laying around the house)

Note
This is a perfect pre-prep meal. You could cut everything up ahead of time and store in separate baggies then refrigerate. When you are ready to make the meal, simply follow instructions.
Including prep, this recipe takes less than 20 minutes from start to finish. My kids were completely silent while stuffing their faces with this meal - a rarity in my house!

Step 4 | |
Drink the rest of the beer. |
Fresh Fish Cakes
Here is another fish recipe that you can make from the ENORMOUS bag of frozen tilapia that you buy this week. This fish cake recipe uses fresh fish rather than canned. I recommend baking the fish first thing in the morning or at lunch time so that when you’re ready to make dinner, the fish is ready and you have less than 15 minutes from mixing ingredients to table. You could also bake the fish the night before and have it ready when you are. Whatever you do, this is a delicious recipe and I promise to have pictures of it this week.
Fresh Fish Cakes
Serves | 4-6 |
Prep time | 10 minutes |
Cook time | 25 minutes |
Total time | 35 minutes |
Allergy | Egg , Fish , Tree Nuts |
Dietary | Diabetic , Gluten Free |
Meal type | Appetizer , Lunch , Main Dish , Starter |
Misc | Child Friendly , Freezable , Pre-preparable |
Region | Greek |
Ingredients
- 1lb Tilapia (Cook this the night before, or at breakfast/lunch the same day.)
- 2 tablespoons Olive Oil
- 1 Egg
- 2 Scallions (Thinly Sliced)
- 1 tablespoon Lemon Juice (Fresh Squeezed)
- 2 tablespoons Coconut Milk (Full Fat, from the can)

- 6 tablespoons Almond Flour/Meal
- 3 tablespoons Parsley (Parsley Flakes or Freshly Chopped)
- 3 dashes Hot Sauce
- Salt & Pepper
Note
These fish cakes freeze really well. Once fish cakes are formed into patties, freeze on a baking sheet, then wrap individually in plastic wrap, then store together in gallon sized ziploc bag for up to one month. Allow them to thaw completely then follow cooking instructions.
Directions
Step 1 | |
Preheat oven to 400*. Rub Fish with 1 Tablespoon Olive oil, then bake for 15-20 minutes. When done cooking, let fish cool completely. Pat the fish dry between papertowels, then flake with a fork.
Step 2 | |
In a large bowl, combine tilapia, egg, scallions, lemon juice, coconut milk, dijon mustard, almond meal, parsley, hot sauce, 1/8 teaspoon salt, and 1/8 teaspoon pepper. Combine until all ingredients are mixed and hold well together.
Step 3 | |
Heat 1 Tablespoon olive oil in skillet or griddle over medium heat. Pat the mixture into 8 identically sized patties and cook until golden brown and heated through, about 2-4 minutes per side. |

I just found your site today and I wanted to say THANK YOU SO MUCH! I know making a menu is a tough and generally thankless job and to post them for FREE is beyond amazing. I have a similar history to yours and am now Gluten Free, Dairy Free, Corn Free, Peanut Free and Sesame Free. Paleo is my best option for finding food (Ha!), but because I’m new to it and am learning how to shop again, our food bill has jumped $300 a month!! Yikes! Thanks again! This is a lifesaver!

Heather, thank you SO much. I can’t tell you what that means to me, honestly. I need to put a new meal plan up this week. It is definitely a tedious, thankless job, but when someone like you comments, it makes every hour worthwhile. Thank you!
