This chicken protein bowl is a fantastic and easy to cook meal for people eating keto or low carb. The recipe is easy to double which makes for lots of meals (read: LUNCHES!) that last all week long!
Being a mom in the fall is no freaking joke. I’ve got gymnastics, ninja warrior, voice lessons, and soccer plus school and volunteer opportunities. It’s like the day I feel like I’m going to catch a break the only thing I catch is some feels over the fact that I’m less than two years away from having a kid in college.
And of course, the first thing to fall away is diet, because let’s be honest, food prep SUCKS.
At least I think it does.
To combat the craziness, I have an arsenal of easy to cook meals like this chicken protein bowl, that can be prepped ahead then thrown in the oven while the kids are showering for a quick dinner after soccer practice.
This is one of those recipes.
It’s super easy to prep this chicken protein bowl ahead of time and then bake when you need to, but it also comes together pretty quickly from start to finish, plus it has bacon in it, so it’s a crowd pleaser.
You can eat it as-is or serve it over riced cauliflower or roasted spaghetti squash. Just don’t forget to get your veggies in somehow!
Kicken Chicken Protein Bowl

Ingredients
- 1.5lb Chicken Breast (Diced)
- 10 pieces Cooked Bacon (Diced)
- 1 jar Pesto
- 1 Red Onion (Diced)
- 3 Cloves Garlic
- 8oz Feta Cheese
- 1/2 cup Mozzarella Cheese (Grated)
- Salt & Pepper (To Taste)
Directions
Step 1 | |
Preheat oven to 375*. Cook bacon and reserve grease. Sautee red onion and garlic in bacon grease until soft then add cubed chicken and cook through. | |

Once chicken is cooked through, drain chicken and add pesto. Stir until well combined. Add crumbled bacon and feta cheese to the chicken and onions then add to an oven-safe dish. Top with mozzarella cheese and bake until cheese is melted and bubbly, about 15 minutes | |

Remove from oven and let sit for 5 minutes before serving. |
